I recently got a Ruger LC380/LC9. I was surprised to discover that the serial number is actually on the metal insert and not ont he polymer grip, so very similar to the Beretta Apx. I see that there's different colored polymer grips for the Ruger, does anyone know a place to get these polymer grips and just swap the metal insert, since that's the serialized part?

The serial number plate is molded into the frame that makes the frame the gun. You can replace the barrel and slide but to get another color you have to but another gun that color.
Ah, a great excuse to add to your collection.

In a video to reduce trigger travel the entire metal chassis is removed from the polymer grip, very much like a Sig P365 or Beretta APX.
